Hotel Description:                                                    

The Hotel is located in Khon Kaen and is currently under refurbishment most of the rooms have been upgraded but work is continuing both front of House and back of house, there is also an additional development underway for an 80 be boutique property as well.

This would be an Ideal opportunity for an executive Sous chef, from a corporate back ground with both volume experience and top end brasserie operations to take the next step. This is probably a Thai national role, but if you are at this level as an expat and speak Thai ,you would also be considered

Overview

Supervises the chefs and kitchen staff at work and oversees the kitchen operation in all the kitchens Is familiar with all the kitchen sections

Check on staff requirements and preparations, for daily service

Ensure that all food prepared and served are according to the standards set by you and the General manager

Menu planning and costing

Trains staff – on the job- on going, occasionally conducts classroom training and Health and safety

Imparts to staff knowledge and skills and encourages them to constantly expand knowledge by studying on their own

Controls cost by exercising portion control. minimizing wastage, and over Production and maintain consistent standards of service delivery

Ensure kitchen Health and safety policies are in place and maintained,
